which is best to use,
acrobat reader 8 or 7?

Using 7 professional and 8 reader. Both recommended in their own places. For normal viewing definitely 8 Reader.

use both.. both are free.. try urself

On a serious note 8 uI is good.. no other diff i see

both are readers only. 8 is latest version, if you find it slow on your system stay contended with 7. Its not that difficult to figure out, is it??

and if both are slow.. go with foxit reader.
