Hmmm... Most of the motherboards will have this feature built-in. If the CPU temperature goes beyond a "threshold" then system will be shutdown automatically. You can check in your BIOS for this option and also in motherboard manufacturer's website for more details. By the way, most of the new CPUs (P4 or later, or AMDs with Cool'n'Quiet) can also throttle the clock speed and/or core-voltage, if temperature increases.

I just checked SpeedFan and it indeed allows you to take actions based on CPU core temperature values. Check the parts within red box, in the below image:

I installed Everest Ulti edition and found the setting where the PC can be shutdown when temp goes above a preset value. It is working.
