Default How much of a difference

How much of a difference will it make if one is using a AMD Athlon 64 2800+ or AMD athlon 64 3000+

Will the difference in performance be great?

You won't notice any difference for most applications. Benchmarks will show a slight difference and some CPU-intensive tasks will be slightly faster with the 3000+ if you time them carefully, but that's about it.

Yes a 3000+ can outperform a 2800+ in every benchmarks but a 2800 is priced lower. But if we calculate price/perfomance a 3000+ comes out top as the price difference is not so large.
