Choose "Manual" option while in partitioning stage, and choose that 7 GB partition and mount it as "/" root. You also have to create a small (512 MB) partition for "Swap".

Open GParted Partition Manager and format 7GB space in ext3 Filesystem. Create new 512MB partition and format it as SWAP. Start Mint installation and select Manual Partitioning in Partition Section. Assign / mount point to ext3 partition. Installer will detect SWAP and Windows OS itself. Don't worry about dual boot. Installer setup dual boot and you will have choice to boot either OS at startup.
Do let us know how it goes ! Good Luck !
