You will need a MIDI composer. In a MIDI composer, you can select from the available instruments (usually about 128 of them). Each instrument is a channel. You can play one at a time and keep recording. In the end play all of them together for a piece of music.

Do you know layers in photoshop? Each channel in a MIDI file is like a layer in photohsop files

Do you know what are chords?? Chords are 3-4 notes played together. Of course, they are not any random notes, but specific ones and those that create proper sounds for example C-sharp chord, etc.

In some case, channels can behave like chords. For example, if there are 4 channels of the same instrument playing at the same time, it will sound like a chord. If channels are different instruments, it won't sound like sound like a chord.

Hope your basics are clear

Presently I don't know about any! I had one old one which was made for Win3.1. But I will have to search for the CD in the pile

Try googling.
