Now the catch is will they change it again because the colors are not right?
Also as soon as I look it from a slight angle there is a instant bluish tint, which goes to pink as i increase the angle, something which was not there with the original display...
EDIT:My original display had darker colors, this one has lighter colors.
What should I do?!

It's a known issue with SGSII, I myself went through the pain of replacing 4panels for the same issue.
Shoot a mail to Samsung india, throw the phone on their service center incharge's face, ask them to give you a new phone, no screen change nothing.
Else you can also get a full refund cheque from Samsung citing the display issue, coz the issue is persistent no matter how many screen changes you make.
Also check for pink spots in Camera images, just try to shoot a complete white background(Eg. White paper sheet)
you should be able to see a big pink spot in the center of the image, even in live view.
Phones with significant yellow patch issue have this issue as well.
Regarding washed out colors, you can try DarkyROM2 with supercore 1.8 kernel, which has better color saturation over most of the ROM's.
UPDATE:
Try this app to change color values and see if it is okay for you, instead of flashing a new ROM just for color saturation.
