How do games churn out nonstop music ?

In games like Bejewelled Deluxe 2 and inspheration (www.reflexive.com ), we get to listen to some good non-stop music. I wonder from where this music is coming.

I have searched for audio files inside the folders in "Program files" using game audio player. But I could not locate any audio files.

Can some body tell me how to extract this music?

They might be embedded in some .dat files or such. Mostly cant be extracted, but there are some tools to do so for popular titles.
