You can use simple drag-and-drop from within iTunes too if you want. Syncing is optional.
Whenever we used to have a debate about iPod vs. other media players around here, I always gave credit to the other players for not making the use of proprietary software necessary.
Not any more.
I have a Sony Ericsson K530i with a 2GB memory card. When I wanted to fill it with songs, I just connected it to my Mac and dropped my whole collection onto it and let it do its transfer thing the whole night. Cool! I loved it.
Now, my iTunes library and taste in music has changed considerably since I copied those songs onto my phone. What do I do now? I'll have to sort out all the different tracks individually and delete them and then sort out all the tunes in my library which I've added since the last time and copy them over onto the phone. This is, of course, impossible to do.
So the only somewhat sensible option is to delete the whole collection and replace it with the new one, which will again take a few hours and nullify all the playlists I have created on my phone. Also, it won't copy my iTunes' playlists over to my phone.
Now I've realised how cool a feature syncing really is. I can't wait for the day I buy the iPhone and willfully tie myself into the iTunes+iPod proprietary lock-in. It's a match made in heaven.
