Yes, you will get a Option to select which hardrive to boot. If you want to temporarily boot a hardrive, you can press F10 for an Intel Mobo :)

There is no master, slave concept in SATA as sukhdeep said, I am not aware of the BIOS settings of your MB but the concept should more or less be the same. In the BIOS there should be an option to choose, 1st HDD, 2nd HDD, 3 HDD and so on till the number of HDDs you have installed. 1st HDD should be the one your system would boot from, the drop down menu will show all HDDs installed and you can change it from there. Set it to the one you wanna boot from. The other thing is the Bootdisk priority, Bootdisk priority will not give you the option of choosing the HDD, it would only show you which media to boot from......HDD, CD ROM, USB etc. The 1st priority should be set to HDD n thats it, and the system should boot from the 1st HDD you have choosen earlier (provided it has the primary partition with windows on it)..........
Hope this helps......
