Similar to doing in Windows (rt clicking on my documents and changing target in properties), is it possible to change a user's documents directory to a mounted drive? I have my documents in /win/docs and i want that as my user1 id's documents folder.
I don't want to make any change to my home folder though. I am ok with /home/user1

I guess it's just a normal directory, right? If so, then you can mount /win/docs as ~/My Documents.

1. Create the shortcut of /win/doc on ur desktop or on any other place u want!! Use the "Make Link" option!

or

2. Right click on desktop and select create launcher, in the command type "nautilus /win/docs" and for other fields use ur imagination!! (This is for gnome).
