Audacity for sure.
I haven't used these two, but from the looks of them, seems good.
1. Jokosher (http://www.jokosher.org/) is a simple yet powerful multi-track studio. With it you can create and record music, podcasts and more, all from an integrated simple environment.
2. Traverso (http://vt.shuis.tudelft.nl/~remon/traverso) is a multitrack audio recording and editing program for GNU/Linux with special emphasis to create an easy to use program with a clean and intuitive interface.
