Any online manual/documentation software?

Greetings,
I am looking for an online manual/documentation for my server. I want to use that for both intranet and internet documentation.
I tried using media Wiki, but it's too fluid and big to handle. I want a structured software which can help me write manuals and documentations on the fly!
Can somebody tell me any open source/ or even commercial software for this?
