U wont get real time speed & multitasking benefits with x64 until you are using 4Gb & above ram.

In x64 OS each software (assuming they are 32bit)can minimum use full 2gb ram, so the real benefit will be when you need to have 2-3 software making use of full capacity (2gb each)for which you would need above 4Gb of ram. Of course x64 will work in crawling mode on 512mb of ram (x64 Vista would require at least 2gb with a decent graphic card)
I run 3 application which are x64 & each one of them is capable of using full 4gb & above if available so thats the real benefit of x64.

Another things to consider is that you wont be running 3gb in dual channel mode, either it should be 4gb or 8gb (correct me if I am wrong)
